Carrot Cake

Ingredients:

1 1/2 Cup Flour
1 Cup Sugar
1 TSP Baking Powder
1 TSP Baking Soda
1 TSP Cinnamon
1/2 TSP Salt
2/3 Cup Vegetable Oil
2 Eggs
1 Cup Shredded Carrot
1/2 Cup Pineapple with Syrup
1 TSP Vanilla Extract

For Cream Cheese Frosting:

3 oz package of Cream Cheese, softened
1 TBS Butter, softened
1 TSP Vanilla Extract
2 Cups Confectioner’s Sugar

Directions:

  1. Preheat oven to 350
  2. Mix all ingredients until moist
  3. Beat 2 minutes at medium speed
  4. Bake in 9x9x2″ pan for 35 minutes
  5. Mix frosting ingredients, spread on cake
