Carrot Cake Oatmeal Cookies

Ingredients

• 1 1/2 Cup Flour
• 1 Cup Sugar
• 1 TSP Baking Powder
• 1 TSP Baking Soda
• 1 TSP Cinnamon
• 1/2 TSP Salt
• 2/3 Cup Vegetable Oil
• 2 Eggs
• 1 Cup Shredded Carrot
• 1/2 Cup Pineapple with Syrup
• 1 TSP Vanilla Extract

For Cream Cheese Frosting

• 3 oz package of Cream Cheese, softened
• 1 TBS Butter, softened
• 1 TSP Vanilla Extract
• 2 Cups Confectioner’s Sugar

Instructions

1. Preheat oven to 350° F
2. Mix all ingredients until moist
3. Beat 2 minutes at medium speed
4. Bake in 9x9x2″ pan for 35 minutes
5. Mix frosting ingredients, spread on cake
