Carrot Cake Oatmeal Cookies
Ingredients
- 1 1/2 Cup Flour
- 1 Cup Sugar
- 1 TSP Baking Powder
- 1 TSP Baking Soda
- 1 TSP Cinnamon
- 1/2 TSP Salt
- 2/3 Cup Vegetable Oil
- 2 Eggs
- 1 Cup Shredded Carrot
- 1/2 Cup Pineapple with Syrup
- 1 TSP Vanilla Extract
For Cream Cheese Frosting
- 3 oz package of Cream Cheese, softened
- 1 TBS Butter, softened
- 1 TSP Vanilla Extract
- 2 Cups Confectioner’s Sugar
Instructions
- Preheat oven to 350° F
- Mix all ingredients until moist
- Beat 2 minutes at medium speed
- Bake in 9x9x2″ pan for 35 minutes
- Mix frosting ingredients, spread on cake
