No-Bake Oatmeal Walnut Cookies

  1. Line a baking sheet with parchment paper.
  2. In a food processor, combine the dates, walnuts, and oats until crumbly.
  3. Add the date sugar, flax mixed with water, vanilla, and cinnamon and process until the dough holds together.
  4. If the mixture is too dry, add a little water. Scoop out about 1 tablespoon of the dough and roll it between your hands to form a ball. Place on parchment-lined baking sheet.
  5. Use a fork to press them down with a crosscross pattern.
  6. Refrigerate for 4 hours to firm up before serving.
