No-Bake Oatmeal Walnut Cookies

Materials
- 1 ½ Cups Pitted Dates soft
- 1 Cup Walnut Pieces
- 1 Cup Old-Fashioned Rolled Oats
- 2 Tbsp Date Sugar to taste
- 1 Tbsp Ground Flax-seed
- 2 Tbsp Warm Water
- 1 Tsp Vanilla Extract
- 1 Tsp Ground Cinnamon
Instructions
- Line a baking sheet with parchment paper.
- In a food processor, combine the dates, walnuts, and oats until crumbly.
- Add the date sugar, flax mixed with water, vanilla, and cinnamon and process until the dough holds together.
- If the mixture is too dry, add a little water. Scoop out about 1 tablespoon of the dough and roll it between your hands to form a ball. Place on parchment-lined baking sheet.
- Use a fork to press them down with a crosscross pattern.
- Refrigerate for 4 hours to firm up before serving.
