No-Bake Oatmeal Walnut Cookies

  • Food Processor


  • 1 ½ Cups Pitted Dates soft
  • 1 Cup Walnut Pieces
  • 1 Cup Old-Fashioned Rolled Oats
  • 2 Tbsp Date Sugar to taste
  • 1 Tbsp Ground Flax-seed
  • 2 Tbsp Warm Water
  • 1 Tsp Vanilla Extract
  • 1 Tsp Ground Cinnamon


  • Line a baking sheet with parchment paper.
  • In a food processor, combine the dates, walnuts, and oats until crumbly.
  • Add the date sugar, flax mixed with water, vanilla, and cinnamon and process until the dough holds together.
  • If the mixture is too dry, add a little water. Scoop out about 1 tablespoon of the dough and roll it between your hands to form a ball. Place on parchment-lined baking sheet.
  • Use a fork to press them down with a crosscross pattern.
  • Refrigerate for 4 hours to firm up before serving.
