Royal French Toast


16 slices firm white sandwich bread
8 ounces package whipped or low-fat cream cheese
3 eggs, beaten
1 cup milk
1 teaspoon vanilla
1/4 teaspoon freshly grated nutmeg
1/4 cup vegetable oil
12 ounces jar apricot jam


  1. Preheat the oven to 425° F and spray a large cookie sheet with Pam.
  2. Combine the Apricot Jam and Cream Cheese, spread on the bread and make sandwiches.
  3. Beat together the eggs, milk, vanilla, and vegetable oil in a shallow dish. Dip both sides of each sandwich in this mixture and place on the prepared cookie sheet. Bake for 5 minutes each side, or until golden.
