Breakfast Bake


8 large eggs
2 Cups shredded hash browns
6 pieces of cooked bacon
1 ½ Cups shredded cheddar cheese
1 TBSP vegetable oil
Salt and pepper to taste


  1. Cook bacon.
  2. Preheat oven to 425º.
  3. Press hash browns into the bottom and sides of a casserole dish. Bake for 20 minutes until edges are golden brown.
  4. Change oven temperature to 350º.
  5. Whisk eggs, add broken up bacon, cheese, salt, and pepper. Pour onto hash brown crust.
  6. Bake for 25 minutes. Cool for 10 minutes before serving.
