Pancakes

Ingredients:

2 Cups all-purpose flour
2 TSP Baking powder
1/4 TSP Salt
1 TBSP Sugar, optional
2 Eggs
1 1/2 to 2 Cups Milk
2 TBSP Melted and cooled butter (optional), plus unmelted butter for cooking, or use neutral oil

Directions:

  1. Mix together flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat eggs into milk, then stir in butter.
  3. Mix wet ingredients into dry ingredients.
  4. Bake on a hot griddle or skillet.
